Nose
Zesty citrus flower, passionfruit and
gooseberry lift coupled with subtle
herbaceous tones lift from the glass.
Palate
Juicy, succulent and refreshing. Fine acid
and a slight textural element from the French
oak.
Harvest
The Semillon was machine harvested in the cool of the night on 28th of
February.
Winemaking
After a small period of skin contact the fruit was pressed and
transferred straight to large format older French oak for fermentation.
The Sauvignon Blanc parcel, selected from our ‘hanging cane” trellis
block was machine harvested on the 12th of March, spent 18hrs on skins
to extract flavor and punchy aromas and then pressed to a stainless tank
for a long, cool and controlled ferment. A blending trial was undertaken
to ascertain the best balance for the wine, decided as 70% Sauvignon
Blanc and 30% Semillon, then the wine was blended and fined with
natural fining agents and then gently filtered and bottled early to retain
freshness and vibrancy.
