Nose

Fresh, bright and youthful green apples,
lychee and green melon.

Palate

A delicate bead on the palate, with lemon
zest and fine acid to provide freshness and
structure.

Harvest

The fruit for the 2016 Aravina Estate Sparkling Chenin was hand harvested.

Winemaking

Meticulously hand sorted and whole brunch pressed to
extract only the most vibrant and delicate cuvee. Fermentation
was cool and slow in a stainless tank to retain varietal freshness
and preserve the aromatic profile. Post ferment the wine was fined
using organic products and sent to mature “en tirage” for 15
months for secondary ferment in bottle. After suitable maturation
on lees in bottle the wine was riddled, disgorged and the dosage
added before final sealing with a cork.

Aging

Enjoy now or cellar for up to five years.

Light to medium straw.
