Nose

Blackcurrant leaf, violets, hints of tobacco and cedar on the nose along with dark forest fruits and hints of cacao .

Palate

Laden with cassis and black olive tapenade flavours, the palate is rich and generous. . Hints of star anise and clove compliment the fruit concentration and lead to a savoury finish with slightly suede like tannins giving superb length.

Growing Conditions

Margaret River vineyards produced lower than expected grape yields across all varieties in vintage 2015. The cause can be traced back to adverse weather conditions that affected primordial bud formation, followed by a-typical cool and unsettled conditions in November and December 2014 which impacted flowering and fruit set. Winter was warmer than usual. Disease pressure was minimal, although birds such as Silver Eyes were a problem due to the delayed blossoming of marri flowers so the vineyard was netted. Once again the quality was exceptional in all varieties

Winemaking

Four and a half tonne of pristine Cabernet Sauvignon fruit was picked at 12.7 Baume in the cool of the morning. It was then placed in open fermenters and macerated on skins for 24 days. The cap was lovingly hand plunged four times a day in the early stages of the ferment, to extract colour and tannin. The free run juice was drained and the fermented grapes were basket pressed to tank. The wine under-went a malolactic fermentation which softens the acid. The wine was then racked to French barriques, ( 2/3 new and & 1/3 one and two year old) and matured for 12 months.

Appearance

Ruby red with a deep, dark centre.
