Nose
Gooseberry and cut grass on the nose with hints of lychee and tropical fruits.
Palate
The palate is lush, crisp and long, dominated by fresh citrus notes and a juicy core of tropical fruit. An interesting textural element on the palate is from a small percentage of the Semillon undergoing wild ferment on skins and a short time in oak.
Growing Conditions
The spring of 2016 was much cooler and wetter and this combined with the cooler conditions in early 2017 have seen Vintage 2017 be a more traditional vintage. Most white varieties yields were strong and harvest began later in February and well into March capturing the bright, aromatic aromas. The slower ripening has resulted in superb whites with excellent flavour profiles.
Harvest
The Sauvignon Blanc was picked on March 13th and Semillon on March 16th.
Winemaking
Both the Sauvignon Blanc and Semillon were individually machine picked in cool of the early morning to ensure retention of their aromatic flavour profiles. The Sauvignon Blanc was the first off the vine to ensure the vibrant tropical flavours were captured. Both varieties were destemmed, crushed, and pressed before being fermented in stainless steel tanks with a neutral yeast in order to highlight the individual characteristics. To add a textural mouthfeel 5% of the final blend of Semillon was fermented on skins with wild yeast before being transferred to barrel for three months. After numerous blending trials the final blend, bringing more than the sum of the parts, was 70% Sauvignon Blanc and 30% Semillon. The wine was gently fined and bottled on the 19th June 2017 capturing the freshness for which this blend is loved.
