Winemaking

Gently vinified in stainless steel open fermenters. Hand plunged and basket pressed at dryness. 30% had up to 2 weeks extended skin contact.

Maturation for 15 months in 25% new and 75% older French and American oak barriques.

Aging

10+ Years.

Serve with crusty bread and a glass of Edwards Shiraz.
