Nose

Gooseberry, lime zest and jasmine flower hints atop a rich fruit core of white pear and nectarine.

Palate

Stone fruit viscosity and purity on the entry, accompanied by subtle hints of creamy oak and cinnamon laced into flavours of spring blossoms and cut-grass. The finish is mineral and refreshing with bolder tones of lemon curd lending vibrancy and weight.

Growing Conditions

The fruit is from our small vineyard in the Margaret River region of Western Australia which is established on Treeton loam soils and receives cooling breezes from the Southern Ocean. This single estate vineyard in Rosa Glen has nearly 1.3ha of 38 year old vines. Originally established dry farmed, although now irrigated, these vines produce only moderate yields. The 2015 winter saw mild temperatures with low rainfall, followed by a warm dry spring, the warmth continued through summer together with much higher than usual rainfall. This led to the fruit ripening beautifully somewhat earlier than usual and on 22nd February, 3.75 t was harvested.

Winemaking

18% of the juice was fermented in new French oak barriques, the remainder was fermented in stainless steel. The portions were combined post-fermentation and lees stirred for 4 months in order to develop additional texture and complexity. The wine was lightly fined and filtered before bottling.

Aging

Cellar up to 8 years from vintage.

Appearance

Pale green with yellow streaks.

Food Pairing

This Sauvignon Blanc enlivens light meals e.g. shell fish, seafood pasta and white meat dishes.
