Nose
The wine lifts from the glass with a lovely bouquet of savoury roasted almond and biscuit characters.
Palate
The fine creamy mousse delivers gentle nutty characters followed by a tart citrusy element. The palate is clean and beautifully textured with a lingering finish that encourages just another taste.
Growing Conditions
The Chardonnay fruit is sourced from a small single estate vineyard in Yallingup Siding within the Margaret River Wine Region of Western Australia. The vines produced at approximately 5t/ha and were harvested in early February when the grapes were fresh with a good acid content, ideal for a sparkling base.
Winemaking
A portion of the base wine was fermented in French oak barrels contributing a degree of complexity to the base wine. Secondary fermentation proceeded in the bottles in the traditional method. The wine was aged for 30 months on the lees before riddling, disgorging and dosage in February 2018. The bottles are sealed with a Diam cork and muselet.
Appearance
A clear straw colour with a very fine bead.
Food Pairing
This wine is an excellent aperitif, but easily compliments late breakfasts, lazy lunches and light dinners.
