Palate
Medium-bodied in weight, smooth & generous. Intense stone fruit flavours are enhanced with lively, fresh, citrus acidity. The oak component is barely noticeable yet plays an integral role in the structure & finish
Growing Conditions
A challenging vintage due to rain. However, the viticulture team was able to deal very effectively with the problem through meticulous canopy management & judicious use of organically approved sprays, meaning quality remained strong
Harvest
48% Clone 95, 37% Gingin, 15% Clone 1 picked between 18th - 25th February 2021 at Baumés between 11.1-12.4° Bé. The vineyard is sustainably famed following organic principles
Bottling
The wine was bottled on 23rd December 2021
Winemaking
100% of the crop was barrel-fermented in French barriques (of which 10% were new) The Gingin parcel was whole-bunched pressed straight to barrel & wild fermented. The other clones were destemmed, inoculated & fermented in barrel. Malolactic fermentation was blocked. Vegan friendly. Bottled December 2021
Aging
The wine spent nine months on lees in French barriques.
