Nose
Uplifted aromas of cherry, cranberry, floral perfume and exotic spice combine with a leafy forest floor complexity to create a classic cool climate Pinot Noir. Maturation in French oak barriques for 12 months provides subtle vanillin notes and lovely savoury backbone.
Palate
The palate has generous upfront, rounded, sweet red plum fruit, counterpointed with savoury dried mushroom and a sublime mineral acidity nuanced with supple, powdery tannins.
Growing Conditions
The outstanding Pinot Noir fruit is grown in the ideal cool climate terroir of Manjimup, deep in the premium South West wine zone. The 2015 vintage produced ideal ripening conditions for the variety with cool weather right up to the second week of March, complimented by a warm and dry spring, producing a wonderful fruit set an ideally timed harvest.
Winemaking
The fruit was picked at optimum ripeness in the cool of the morning before moving immediately to the winery for fermentation. Maturation was in one to three year old French oak barriques for 12 months, providing the subtle vanillin notes, savoury backbone, added texture and complexity.
