Fruit for the 2017 Hutton Triptych Margaret River Chardonnay was sourced from the Wildberry Springs vineyard in Wilyabrup. The Mendoza clone grapes were hand picked in February, chilled overnight, then gently whole-bunch pressed. The free run juice and light pressings were fermented naturally with wild yeasts in French barriques (25% new). No malolactic fermentation was encouraged to preserve the bright, natural acidity. The wine was matured for 8 months in barrel with regular battonage.
