Palate
It has pure flavours of blackcurrant and redcurrant , the tannins fine and ripe, the oak subtle.It is the palate that really distinguishes this beautiful wine.
Growing Conditions
2012 Vintage will be remembered as almost perfect for the growing and production of premium Cabernet Sauvignon. The summer was long and warm and almost devoid of any rain events throughout the growing period. These conditions along with the demise of the local silver eyed bird (bush fires got them!) resulted in great yields of perfectly ripened Cabernet.
Winemaking
Hand picked in early April, the fruit was de-stemmed and separated into open and static fermenters. The open ferment had an eight day period on skins whilst the static ferment was on skins for a total of 35 days. The fruit was pressed off and spent 18 months in a combination of new and used French oak, approximately 30% new.
Aging
10 years.
