Nose

It is vibrant and complex with a nose of blackcurrant, eucalypt and well integrated French oak.

Palate

The palate of dark berry fruits, herbs and cedary oak is tightly structured by the fine-grained tannins and acidity. While 'Gallagher's Choice' will drink well at release, patience will be rewarded as the wine develops and evolves over ten years..

Harvest

Hand picked from 30+ year old dry grown vines, 'Gallagher's Choice' is a classic, full-bodied Margaret River Cabernet Sauvignon.

Winemaking

6.94 tonnes of estate-grown fruit were specially selected and handpicked from 30 year old dry grown 'old block' vines planted by Jeff and Wynn Gallagher in 1982 at a Baumé of 13.5° on 13th March, 2013, then transported directly to the winery, crushed and placed in open fermenters. At this stage the grape acid was adjusted and inoculated with yeast. For the following six days the crushed grapes were hand plunged and temperature controlled. The "must" (skins and wine) was then pressed and pumped to stainless steel tanks to allow secondary or "malolactic" fermentation to take place. At the completion of this process, the wine was racked to French oak barriques for twenty months of maturation.
