Nose

Produced and bottled at Woody Nook's single vineyard estate, this wine exhibits fresh apple and sweet melon aromas enhanced by subtle toasty oak characters on the nose.

Palate

The medium-bodied palate combines melon and stonefruit with a hint of creaminess. A streak of crunchy green apple acidity gives the wine freshness and a lingering finish.

Winemaking

On February 9, 2015, 5.235 tonnes of Chardonnay grapes were picked on the new block of the estate at a Baumé of 12.0° and brought straight to the winery from the vineyard, crushed, pressed and pumped into stainless steel, refrigerated tanks for settling. The clear juice was then racked to fermenters for alcohol fermentation, 100% in stainless steel tanks. This process took 7 days. The wine was then transferred to a mixture of new and one-year-old French barriques to complete fermentation and mature over eight months with regular battonage. 330 cases were bottled in December 2015.

Aging

Drinking well now, however medium term cellaring of 3-5 years will be rewarded.
