Nose
This wine shows intense aromatics of red fruits combined with more savoury notes of black olive, bay leaf and roasted coffee bean with generous lashings of cedar.
Growing Conditions
The 2012 vintage was another excellent vintage in Margaret River. High winter rainfall saw the soils replenished with vital water supplies for the growing season to follow. A warm summer, without excessive temperatures meant that sugar accumulated steadily in the berries and with careful monitoring of the fruit we were able to ensure the fruit was hand harvested when flavour was at its peak.

Winemaking
The fruit was hand-picked to maximise quality and to allow sorting of the fruit to ensure only the highest quality grapes were permitted into the fermenter. Fermented in open top fermenters for a period of ten days the wine was gently pressed off skins in a basket press, for the completion of alcoholic fermentation. The wine was then racked to French oak barriques and inoculated for malolactic fermentation. Following malolactic fermentation the wine spent 15 months maturation in new and seasoned oak. This is a small volume wine that was handled separately through its life and speaks of the subregion in which the grapes were grown.

Brilliant, dark red in appearance with a scarlet hue.
