Nose

Beautifully fragrant green apple and melon, there is a pleasant yeast/fresh bread aroma with touches of lemon spritz.

Palate

A fine and persistent bead with a pale lemon hue, the palate is dry and complex with touches of nougat, brioche and lemon meringue, balanced with a touch of citrus peel, well rounded and finishes with a beautiful lemon/lime acidity.

Growing Conditions

Margaret River vineyards produced lower than expected grape yields across all varieties in vintage 2015. The cause can be traced back to adverse weather conditions that affected primordial bud formation, followed by a-typical cool and unsettled conditions in November and December 2014 which impacted flowering and fruit set. Winter was warmer than usual. Disease pressure was minimal, although birds such as Silver Eyes were a problem due to the delayed blossoming of marri flowers so the vineyard was netted. Once again the quality was exceptional for Cape Grace Wines.

Winemaking

The grapes were hand picked in the cool of the early morning to retain the delicate flavour profile. Whole bunch pressed then fermented in barrels with a mix of indigenous and freeze dried yeast strains. Bi-weekly battonage on lees to give the wine depth and complexity. Bottled for second fermentation in July 2015 to ensure retention of the fresh fruit characteristics. Disgorged in February 2016, a small tirage of 4g/L was added to balance acidity.
