Nose
White nectarine, meringue and shaved almonds.
Palate
Rich flavours of freshly cut peaches, brioche and lemon grass are
gently balanced by soft natural acid and generous textures of
whipped cream and citrus blossoms. A fine and focused finish of
crushed granite and sea-spray.
Growing Conditions
The 2019 vintage required high attention to detail in the vineyard
and highlighted the benefit of having four diverse vineyards
across the Margaret River region. Weather patterns were
inconsistent, presenting challenges in budburst and flowering
throughout the winter and spring months. A lack of extreme
temperatures in summer and autumn combined with leafplucking,
shoot thinning and bunch thinning encouraged more
even ripening. Nets were essential to protect fruit, with a lack of
Marri blossom in the region to distract the bees and birds. The
resulting low yields presented fragrant wines with succulent
natural acidities.
Winemaking
The fruit is harvested at the coldest part of the day, cold crushed
to press and skin contacted for 6 hours before gentle pressing.
The juice is cold settled and racked to old French oak barriques
for fermentation. When fermentation was complete, the wine was
then aged on it’s lees with gentle battonage for 7 months before
blending and bottling.
Aging
Enjoyed for its freshness now or cellar for up to 8 years for further
complexity.
