Palate
Fine and delicate tropical fruit freshness combines with abundant
citrus and stonefruit flavours. A fine, chalky acidity completes a crisp and fresh
style.
Growing Conditions
Vintage 2015 began with cool, wet and windy spring growing conditions which
affected fruit set, resulting in 20-25% lower yields . Mild to warm weather in
the early stages of summer accelerated berry development and flavour ripening
leading to the one of our earliest harvests on record. Bird pressure also
affected yields, resulting from a delay of Marri blossom throughout the region
in the lead up to harvest, which kept our vineyard crews busy netting the vines.
Some minor wet weather conditions occurred after harvesting the whites and
prior to red harvest, bringing temperatures down and the beginning of a general
Autumnal weather pattern during this time. The cooler weather effectively
extended the ripening period for the red varieties, allowing them to develop
full flavour profiles and ripe, soft tannins. While yields were on the low side,
fruit quality was excellent, marking another golden year for Margaret River.
Winemaking
The traditional Semillon-Sauvignon Blanc blends originated from the Graves
region of Bordeaux in South West France. The two grape varieties that make
up this traditional white wine blend have found a more than suitable home in
the Southern Hemisphere in the Margaret River region.
Margaret River SSB wines often display a powerfully aromatic expression of
the style. Grown on our Wildberry Estate Vineyard, the 2013 Flying Fish Cove
displays the lifted aromatics combined with a succulent and powerful palate
that is so synonymous with these styles.
