Nose

This classical Italian varietal displays a subtle bouquet of lemon and lime sherbet, green pear, bubble gum and nasturtium flowers.

Palate

The palate is finely textured to begin, with layers and the structure forming through the mid palate which is soft and approachable with a minerality on the finish. The palate displays Granny Smith apples, green pear, lemon with hints of honey

Growing Conditions

Vintage started slightly earlier than normal, with warm weather in the early part of summer giving a flying start to the growing season. “Crop levels were on the lighter side, which gave us strong flavoured fruit and we also saw higher natural acid levels,” Trebbiano harvested in late January and was some of the best we’ve seen.

Winemaking

The fruit was hand picked in the cool of the morning and refrigerated overnight, it was then destemmed and left on skin contact for 3 days to pick up skin flavour and phenolics. The must was pressed to tank settled and racked to low to medium turbidity, then gravity feed to used French barrels and naturally fermented, once fermented the wine was left on yeast lees and stirred fortnightly to build palate weight and texture. The wine stayed on lees for five months before being bottle in July 2021.
