Nose

Intense aromas of pepper, red berries and spice.

Palate

Rich and full of powerful red and black fruits with fine grained, firm tannins. With time this wine develops a unique honeycomb character.

Growing Conditions

Generally a mild growing season with excellent rainfall during spring. Moist conditions promoted some vigour in the vineyard and the need for leaf plucking. Summer was dry and warm. A near perfect season for the Great Southern.

Winemaking

The wine was
vinified using a selected Shiraz yeast in open fermenters under closely controlled
conditions. Two weeks after fermentation the wine was pressed directly into French
oak barriques. During 12 months in oak the wine was minimally handled, fined using egg whites and bottled with minimal filtration.

Food Pairing

Red game meats, lamb and rich beef dishes, grilled beef fillet with celeriac puree.
