Dry grown Chenin Blanc from a certified Bio Dynamic vineyard in Yallingup. Hand harvested, destemmed into amphora for 4 days to ferment on skins then pressed off skins back to amphora. Once the degrees of natural sugars reaches a certain level, the ticking wine was transfered directly into bottle where it is allowed to complete its natural sugars to leave a wine thats is naturally sparkling. No nothings. Sans sulphur.
