Nose
Fresh & vibrant aromatics of citrus blossom, kaffir lime leaf, nectarine and guava overlay subtle savoury notes of green olive and lemon thyme.
Palate
A textured and balanced style showing lovely fruit weight of stone-fruits and preserved lemon combined with the body and mouthfeel garnered from partial barrel fermentation and maturation on lees. Savoury notes of olive flesh and herbs add complexity while a fresh, mineral acid line ensures a crisp, dry and refreshing finish.
Winemaking
The Sauvignon Blanc portion of the blend was fermented and matured in a combination of new and seasoned French oak, while the Semillon was fermented cool in stainless steel tanks to retain freshness and aromatics. Maturation on ferment lees contributed to texture, mouthfeel and overall complexity.
Aging
Ready for immediate drinking and will continue to drink well over the next 2-3 years.

Brilliant, pale straw yellow with green tints.

Drink with freshly caught local abalone – tenderised, pan-fried and served with fresh lime and a rocket salad.
