The 2021 SRS Chardonnay shows lovely lifted fruit together with some delicate savoury notes from solids and wild ferment. Grapefruit, white peach and dried pear give way to barrel ferment and funky match stick complexities. Fine fruit flavours in line with a cooler vintage, wild barrel ferment and subtle sulphides contribute a delicious savoury oyster shell/saline character on the palate, giving the wine greater complexity and overall purity. This modern style ultimately complements many Australian food flavours, particularly seafood.

Citrus oil, floral notes, dried pear and grapefruit aromas are well supported by subtle French oak. The palate is textured yet fine, finishing dry and savoury; this is a direct result of wild ferments with turbid juices. Drink as a young wine or cellar in the medium term. A classic cooler vintage Margaret River Chardonnay that drinks well now or can be cellared in the short to medium term. Perfect with crunchy seafood. Vegan friendly.

Aromas of red currents overlay subtle floral, cherry and cranberry characters. The fruit flavours are a little more obvious and forward in this lovely early drinking vintage, the difference between using Tempranillo and Pinot Noir as Rose material. The palate however is deliberately savoury and textured, a result of wild ferments in old barrels and 4 months on yeast lees. The palate has moderate weight, soft chalky tannins and a dry finish. A wonderful wine to enjoy at a picnic, dinner party or day at the beach. Pairs perfectfully with olives, cured meats and crusty bread.

The 2021 S.R.S. Sauvignon Blanc has a punchy varietal nose with some leesy and savoury notes, plenty of pink grapefruit, guava and lychee. The palate shows hints of oyster shell and other savoury elements from the wild ferment with grape solids. The style is deliberately savoury, concentrating more on texture and complexity rather than sheer fruit power.
