Palate
This is a taut, composed and powerful Margaret River Cabernet with layers of cassis, blackberry and blood plum, freshly cut sage, dried herbs, fine dark chocolate, star anise and notes of young cedar. It is a wine built on sheets of supple tannin and is deliciously textural with a long finish that lingers well after the last sip.
Growing Conditions
Cool weather and regular rain up until Christmas made a slow start to the season, setting up good ground moisture and vine health coming into summer. An extended period of dry and mild weather during January and February to created and excellent backdrop for perfect ripening producing wines with an excellent depth of flavour balanced with lively acidity.
Winemaking
This wine is built from multiple growers in Margaret River, including old Juniper Estate Cabernet which shows its Wilyabrup pedigree. Bunches were destemmed and fermented in open fermenters and managed with classic pigiage (plunging) and pump overs.

Roast beef slow-roasted lamb aged Cheddar cheese.
