Nose

A complex & alluring bouquet of ripe guava, melon, quince & preserved lemon, complemented by hazelnut and struck flint notes

Palate

In the mouth the wine is structured & textured, aided by the skin contact during fermentation, yet remaining balanced with refreshing saline acidity keeping the focus straight & true

Growing Conditions

A challenging vintage due to rain & disease. However, the viticulture team was able to deal very effectively with each problem, through meticulous canopy management & judicious use of organically approved sprays, meaning quality remained strong

Harvest

Almost entirely picked on 15th and 16th March 2021 at 11.4 Be°. Our Karridale vineyard is sustainably farmed following organic principles

Bottling

The wine was bottled on 9th August 2021

Winemaking

The fruit was fermented on skins for three days, prior to pressing direct to barrel & continued fermentation in open topped barrels.

Aging

Five months on lees in old French barriques, during which time the wine was occasionally stirred. to enhance texture.
