Nose

A complex & engaging nose, undeniably Sauvignon Blanc, with dark smokey oak input & a creamy generosity

Palate

Fruit textured, generous & fruit driven, framed by subtle oak. The wine has a driving acid line - balanced with fruit & oak which ensures freshness & longevity

Growing Conditions

Average rains over winter & spring but cool cloudy conditions caused reduced fruit set in some varieties. Summer was warm with no heat spikes & was very dry, perfect for berry development. Heavy cropping on some varieties necessitated bunch dropping to achieve full ripeness. Cooler conditions later in summer extended the ripening period

Picked from Block 6 & Block 8 on Higher Plane on 14th March 2023 at 11.8°Bé

Bottling

Bottled on 30th August 2023

Winemaking

Briefly settled in tank, then inoculated with yeast & barrel fermented. After fermentation was completed, stirring was performed every 3 weeks to encourage yeast autolysis & develop texture & complexity. Unfined

Aging

4 months maturation in neutral, large format French oak.

Appearance

Pale straw, clear & bright

Food Pairing

Hot smoked salmon with lemon & dill couscous or Rigatoni with roasted cauliflower & crispy capers
