Whole bunch fermented with carbonic maceration for 10 days. No additions were made to the juice (ie no sulphur dioxide, no acid, no enzymes and no cultured yeast. Pressed to tank for completion of fermentation. Settled but not fined, then filtered bottled and ready to enjoy young.
