Honeydew melon, cantaloupe, & lemon sherbet with a floral lift combines with a savoury saline character

Palate

Vibrant juicy & textured with the ripe fruit balanced by acidity & salinity. A lick of phenolics provides backend structure & provides a satisfying savoury edge

Growing Conditions

Average rains over winter & spring but cool cloudy conditions caused reduced fruit set in some varieties. Summer was warm with no heat spikes & was very dry, perfect for berry development. Heavy cropping on some varieties necessitated bunch dropping to achieve full ripeness. Cooler conditions later in summer extended the ripening period. Excellent quality

Harvest

Verdejo & Sauvignon Blanc were hand-picked on 13th & 14th March 2023 at 12.6° Bé. The Fiano was harvested on 21st & 23rd March 2023, also at 12.6° Bé

Bottling

Bottled on 30th August 2023

Winemaking

A blend of 36% Fiano, 36% Verdejo & 28% Sauvignon Blanc. The Verdejo & Sauvignon Blanc were pressed together straight to barrel with little to no skin contact, & wild co-fermented in large format oak. Fiano was added later in the ferment. Vegan friendly

Aging

Matured for 4 months in neutral, large format French oak.
