Enticing perfume of pink grapefruit, passionfruit, & pear, with dried herbs & a suggestion of sea spray
Palate
Mouth-filling tropical fruit flavours intertwine with a suggestion of wild herbs. Tangy, refreshing, saline acidity lends a snappy finish
Growing Conditions
An outstanding vintage. The season commenced with a wet start to June when rainfall was 30% above average. From this point onwards the months dried to below average rainfall & maximum temperatures crept up above the long-term averages. Lower yields, but very high quality
Harvest
Picked between 12.0 to 13.0° Bé during February on 13th (Chardonnay), 18th (Sauvignon Blanc), 19th (Verdejo) & 25th (Fiano) from our Karridale vineyard in southern Margaret River which Is sustainably famed following organic principles
Bottling
The wine was bottled on 10th August 2020
Winemaking
The fruit was picked across a two-week period but fermented together spending up to 16 days on skins. The idea was to initiate a long, slow ‘wild’ ferment with gentle extraction of both flavour & phenolics but with the preservation of freshness – not dogmatically ‘skinsy’ or ‘orange’. Pressed to old 500L puncheons to finish ferment & stirred from time to time to build both texture & weight. The wine was settled in barrel, where it spent three months. Unfined, unfiltered & vegan friendly
