Continuing our exploration with verdelho, we took the carbonic macerated, hand-picked, single vineyard Wilyabrup verdelho experiment a step further in 2021….. Adding bubbles, lots of bubbles!
So all the techniques we used in the 2020 Carbonic verdelho we did here too, although the carbonic maceration went for only three weeks this time.
Once bottled we used a wonderfully simple Spagni Ribagas contraption to carbonate each bottle by hand.
