Palate
The palate is voluminous and powerful. Ripe boysenberry and blackcurrant dominate from start to finish. The tannins are silky and long, and persist for eons. Subtle cocoa oak provides the perfect accompaniment. A floral and delicious wine.
Winemaking
All fruit was destemmed into concrete fermenters, with a 5 day cold soak before wild fermentation. Post fermentation, the wines were pressed to French barriques in our underground cellar. Wines were matured on malolactic lees for 15 months before being racked and bottled with no filtration.
