Nose

On the nose the emphasis here is on vibrancy, with fresh lifted fruit aromas of limes, grapefruits, figs and loquats, and a toasty background, derived not from oak but from solids in fermentation and lees stirring. There are also some background herbaceous notes typical of Margaret River Sauvignon Blanc.

Palate

The main aim in making this wine was to produce a palate with fresh fruit flavours and crisp acidity but at the same time, have complexity and length of flavour. Hopefully, this has been achieved. The primary flavours are grapefruit and loquat, acid is indeed fresh but there is good weight and texture providing mid-palate sweetness. This generous mouth-feel has been enhanced by the use of solids and lees stirring. Finally, the wine has a clean finish, with tannin providing structure but no aggressiveness or bitterness.
