Red cherry, dark plums and a spicy edge lift from the glass while more
delicate aromas of violets and white pepper together with subtle
smoky/savoury notes add further layers of complexity.
Delicate red berry fruits fill the palate while ripe, elegant yet firm
tannins add structure and texture. Red cherry flavours linger in the
mouth giving length and purity while the spicy/savoury notes
emanating from the oak displays finesse.
The 2013/14 season started with a very wet but mild Winter which led
to a slightly earlier than usual budburst. Spring conditions were
favourable and the Summer ripening period was mild with very few
heatwave events. The canopies of the Cabernet vines were in excellent
condition to allow fruit to ‘hang’ on the vines and develop ideal
phenolic and flavour ripeness. Although mild, we experienced a perfect
fruit ripening period resulting in a shorter than usual Vintage 2014.
The fruit was gently machine harvested and processed into red
fermenters then tenderly pumped over 3 times a day during
fermentation to maximize colour extraction. Gentle handling of the
fruit and wine ensures varietal character and freshness is maintained.
Medium red with a purple edge.
