'I block'Semillon, this wine was opportunistically
produced on the back of a cool, damp and wet vintage 2017.
Harvested in the cool of the night on the 18th of April 2017.
The fruit was rapidly de-juiced and settled to ensure we limit microbial spoilage
and juice oxidation. Fermented in stainless at a cool temperature and
slowly ensured we retained the varietal and stylistic characters we
were after. Fermentation was halted when sugar and acid balance was optimal
and resulted in a lower alcohol, high sugar and a brightness of acid
through the palate. The wine then spent 6 weeks on French oak to
build aroma profiles and create some further textural elements. Lifted
apricots, honeysuckle and waxy elderflower lift with nougat and
freshness showcasing the palate balance. This wine will cellar with
confidence for the next 15 years, but is also approachable and
refreshing as an early release.
