Nose
Aromas of fresh lemon, grapefruit and pear with underlying
vanillin oak.
Palate
Dry, fresh acid structure with ripe white nectarine and yellow fruits
such as lemon and pear. A lovely rich texture on the mid palate,
originating from time ‘on lees’ and barrel fermentation. This wine
has been made in the French 'Vouvray' style so is well suited to
many foods like white meats and pasta with creamy sauces. Also
very good with Asian food.
Harvest
The best Chenin Blanc fruit in the West Block was hand harvested
at first light on the 4 March to produce the 2015 Block 4 Chenin
Blanc.
Winemaking
The whole bunches were transported directly to the winery
and chilled for 24 hours prior to being whole bunch pressed using
a gentle press cycle, avoiding over extraction.
Following settling the juice was racked to older French oak
barriques for ferment taking some light lees for ferment.
No yeast was added and the wine was allowed to go through a
“natural” ferment. The wine spent nine months in oak on lees.
The wine was blended, lightly fi
ned and filtered prior to bottling.
Aging
Cellar for up to eight years.
Appearance
Light to medium straw.
