coffee beans and silky-smooth tannins

Growing Conditions

The 2019 vintage in Margaret River was milder than average.
High bird pressure and humidity were mitigated through
careful crop management and the early application of bird
netting. The cooler season lengthened the ripening of grapes,
giving us picking windows for optimal grape development. This
favoured the intensity of flavour and aroma profiles of the
finished wines.

Winemaking

The Cabernet Sauvignon and Merlot are selected from the best
parcels of fruit that are hand picked from our single site
vineyard. Processed over our sorting table the parcels are
fermented separately in stainless steel tanks. Once
fermentation had completed the wine was transferred into
French oak barriques of which 55% were new and matured for
18 months. The best barrels of these batches were the
selected, blended and filtered for bottling in November 2020.
