Nose
This is what you get when you juice a Christmas pudding, some fruit mince pies prunes.
Palate
The palate is syrupy and luxurious long finish of raisons and toffee.
Growing Conditions
Black sandy loam over limestone.
Winemaking
The grapes are left on the vine to raison, producing a concentration of flavours by having a higher sugar content. Each year’s vintage is added to old oak hogsheads. This gives the wine a mid reddish brown amber hues and a subtle smokey chara Fermentation is stopped by the addition of a cognac spirit.
Aging
Fully matured when released, but will cellar for years.
Food Pairing
Fantastic after dinner or drown over ice-cream or pancakes.
