Lifted florals of jasmine flowers and rose petals, mixed with fresh lime juice - an intensely aromatic wine.
The palate is a combination of freshly squeezed citrus and spice with a tight mineral definition. Zesty lemon and lime characteristics coincide with the tart granny smith apple presence. Also lingering in the background are white peaches and apricots which adds to the different layers of complexity in the wine. The finish is long, succulent and clean, with mouth watering acidity leaving you wanting more.
The fruit was handpicked in the early hours of the morning then transported to the winery for processing.
The fruit was received quickly after harvest. The fruit was then whole-bunch pressed, transferred into a fermentation vessel and fermented with a selective yeast strain to promote the characteristics of this stunning variety.
Minimal intervention winemaking. Aged and fermented in stainless tanks in order to preserve the varieties lifted aromatics and freshness.
