Nose
The nose is dense and complex showing dark fruits, Satsuma
plums and dark bitter chocolate with alluring notes of anise.
Palate
The palate is rich and textured with slightly chewy earthy
tannins that frame fruit flavours of dark plums, blackcurrant
and cassis. A powerful palate is kept clean a juicy by its
inherent bright acidity and varietal Cabernet characters.
Growing Conditions
The 2012 harvest in Margaret River continued a run of excellent vintages
with slightly above average summer temperatures and average rainfall. Most
importantly, for high quality Cabernet, the temperature was mild through
February and March. This allowed premium fruit parcels to be picked in
perfect condition in early April, prior to heavy rainfall later in the month.
Winemaking
The Deep Woods Yallingup wine is named after two vineyards (where the
fruit was selected) located adjacent to each other in the Yallingup Hills with
an average vine age of 30 years. This wine showcases the hallmarks of a
true Yallingup Cabernet Sauvignon with incredible power and generosity
of flavour. The wine was aged for 16 months in a combination of 40% new
tight grain French oak and 60% seasoned oak barrels. The resultant wine is a
selection of the very best five barrels from this barrel group and showcases a
wine of classic regional expression and balance.
Aging
This wine will benefit from cellaring 10+ years.
Appearance
Deep opaque impenetrable red with a bright purple rim.
