Palate

This wine brims with a zippy acidity, sweet citrus fruits and herbaceous, grassy notes. This a refreshing wine with a long saline finish.

Harvest

The 2018 vintage was, in a word, outstanding. The growing season was steady and moderate, without spikes of heat seen in previous years. The aromatic varieties of Semillon and Sauvignon Blanc performed exceptionally well across the region with vibrant, pristine fruit and racy, natural acidity.

Winemaking

The Sauvignon Blanc was sourced from Karridale and partially fermented in a combination of seasoned and new oak barrels, using only indigenous yeasts with no acid additions. The Semillon was sourced from the Yallingup Hills and fermented in neutral stainless-steel tanks to enhance aromatic freshness.

Pale lemon.

Whiting fillets lightly pan-fried and served with fried capers and a squeeze of lemon juice.
