Nose

The wine is chockfull of flavour, from the initial tropical banana esters, to poached pears, beeswax and some toast development. The oak has contributed a lovely spicy exotic cardamom and five spice aroma.

Palate

The fine acid of the wine effortlessly carries the sweetness of the wine to a full and rich yet cleansing finish leaving the spice flavours lingering.

Growing Conditions

50% Semillon, 50% Sauvignon Blanc. The fruit is sourced from our small family owned vineyard in Rosa Glen within the Margaret River Wine Region of Western Australia, predominantly from 30year old vines. This vineyard is established on Treeton loam soils and receives cooling breezes from the ocean. The canes were cut in the first week of March and the fruit was harvested on 12 April, just before the early autumnal rains started.

Winemaking

The grapes were crushed, pressed, fermented and matured for 10 months in six French barriques (of which one was new).

Aging

The wine affords excellent drinking now, however the sweetness of the wine together with the oak with ensure it will age well, cellar for up 10 years.

Appearance

A bright golden colour that will darken with age.

Food Pairing

This wine compliments dessert but may easily substitute as the dessert. Due to its fine acid, it pairs well with cheese platters; pate; and dark chocolate.
