The 2021 SRS Chardonnay shows lovely lifted fruit together with some delicate savoury notes from solids and wild ferment. Grapefruit, white peach and dried pear give way to barrel ferment and funky match stick complexities. Fine fruit flavours in line with a cooler vintage, wild barrel ferment and subtle sulphides contribute a delicious savoury oyster shell/saline character on the palate, giving the wine greater complexity and overall purity. This modern style ultimately complements many Australian food flavours, particularly seafood.

Citrus oil, floral notes, dried pear and grapefruit aromas are well supported by subtle French oak. The palate is textured yet fine, finishing dry and savoury; this is a direct result of wild ferments with turbid juices. Drink as a young wine or cellar in the medium term. A classic cooler vintage Margaret River Chardonnay that drinks well now or can be cellared in the short to medium term. Perfect with crunchy seafood. Vegan friendly.

Aromas of red currents overlay subtle floral, cherry and cranberry characters. The fruit flavours are a little more obvious and forward in this lovely early drinking vintage, the difference between using Tempranillo and Pinot Noir as Rose material. The palate however is deliberately savoury and textured, a result of wild ferments in old barrels and 4 months on yeast lees. The palate has moderate weight, soft chalky tannins and a dry finish. A wonderful wine to enjoy at a picnic, dinner party or day at the beach. Pairs perfectfully with olives, cured meats and crusty bread.

The 2021 S.R.S. Sauvignon Blanc has a punchy varietal nose with some leesy and savoury notes, plenty of pink grapefruit, guava and lychee. The palate shows hints of oyster shell and other savoury elements from the wild ferment with grape solids. The style is deliberately savoury, concentrating more on texture and complexity rather than sheer fruit power.

This is a classic Wilyabrup Cabernet Sauvignon; medium to full bodied in structure, highly perfumed with fine-grained tannins. The nose on the 2018 SRS is classic Cabernet Sauvignon, lifted berry fruits in the blackberry, cassis and mulberry spectrum, with dark coco undertones. The palate shows crunchy black fruits, dark chocolate and spicy oak flavours. This is the best SRS Cabernet Sauvignon we’ve made to date. The 2018 SRS will drink beautifully as a young wine and will also reward cellaring for the next 10-30 years.

The 2018 Cabernet Sauvignon Merlot is aromatic yet juicy and concentrated, showing mulberry, plum and cassis together with dark chocolate notes. The palate shows ripe, fleshy, varietal Cabernet fruit characters finishing with beautifully structured and softer tannins. Merlot adds mid-palate weight and lovely earthy notes while a small amount of Malbec provides further dark fleshy fruit. This is one of the best Cabernet Sauvignon Merlot blends we’ve produced to date, a direct reflection of the quality of the 2018 vintage.

You've just finished a delicious dinner with friends and now it's time to retire to the back yard and take your place around the fire pit. The conversation and laughter waxes and wanes as you all temporarily get lost in the wine and the ever-changing images flickering in the flames.

The nose is typically aromatic, showing mulberry, redcurrants and chocolate notes. The palate shows elegant varietal Cabernet fruit in the cassis and mulberry spectrum supported by fine chocolatey tannins. Cabernet provides great fragrance, complexity and structure all in the one package. A wine that can be consumed as a young fruit driven wine or cellared with confidence over the medium term.

The 2018 Shiraz has a wide range of fruit flavours and aromas, the focus is predominantly on perfume and elegance rather than raw fruit power. The use of soft extraction techniques, cooler ferment temperatures and open fermenters has resulted in a wine with lovely perfume, dark fruit flavours and fine tannin structure. The palate has plenty of cherries, plums, scorched earth, liquorice and spice. The introduction of more stems, a larger percentage of wild ferment and older oak has given the wine greater complexity, more spice and added texture. Enjoy now or anytime over the next 5-15 years.

The flames of the fire have died down and it's time to place the paella pan over the embers and let the flavours of fresh seafood and smoky chorizo meld into the rice. What a great occasion for sharing a bottle (or two) of delicious blush wine and a bowl of warm food with friends.

The nose shows fragrant lychee, lime, lemongrass and stone fruit. The lychee notes and white nectarine provide a burst of flavour on the palate whilst the grape solids and barrel ferments add complex savoury notes and minerality. A nice balance of fruit flavours, fine acidity and texture are the key attributes of the 2019 vintage. This wine will drink well over the warmer months with or without food and provide some short term reward for cellaring up to 2 -3 years .
