Nose
An intensely inky coloured wine that is medium bodied in style with attractive dark cherry, mulberry and blackcurrant fragrance. Trademark Margaret River Cabernet scents of dried nori, bay leaf and gum leaf.
Palate
Structure and finesse are it’s main features with choc-cherry flavours marrying in with the chocolate and spice oak. Lovely chalky tannin closes out the wine finishing clean and long.
Growing Conditions
A cool, wet winter replenished the sub-soil moisture profiles and the dams overflowed as usual although a bit later than is typical. A picture perfect spring and early flowering about 9 days earlier than usual gave us a very early start to vintage. In January we received 40mm of rain from cyclone Bianca. Also bringing the vintage forward was the consistent heat during February. This run of warm weather continued into March and April. 2011 was the earliest finish to vintage ever with Petit Verdot on the 23rd of March.

Winemaking
The inspiration for the Parterre Cabernet Sauvignon is taken from some of the great wines of Bordeaux. The aim is to use a number of techniques to emphasise complexity in a single vineyard wine and to make a wine that allows the fruit to shine; complemented by premium oak, while maintaining great structure and finesse. This is done by the addition of small amounts of Petit Verdot, Merlot and Malbec and the use of a number of different techniques during fermentation of the Cabernet Sauvignon. Our belief is that by doing all this we have made the best wine possible, and that it truly reflects the place in which it is grown.
