Lifted & aromatic with pungent citrus blossom, Nashi pear, green apple & snow pea aromas augmented by smokey, vanillin oak
Palate
Lively & fine with passionfruit, cut apple, & spicy, herbal flavours, & a touch of struck flint complexity, The texture is creamy; the acidity mouth-watering leading into in a tingly zesty finish
Growing Conditions
A challenging vintage due to rain & disease. However, the viticulture team was able to deal very effectively with each problem, through meticulous canopy management & judicious use of organically approved sprays, meaning quality remained strong
Harvest
100% Sauvignon Blanc hand-picked in two passes on 4th & 11th March 2021 at 11.3° Bé & 12.4°Bé respectively from our Karridale vineyard, which is sustainably farmed following organic principles
Bottling
The wine was bottled on 9th August 2021
Winemaking
100% of the fruit was whole-bunch pressed straight to barrel for wild yeast fermentation. Malolactic fermentation was blocked.
Aging
The wine spent five months in French oak barriques (10% new, the remainder one-, two- and three-year old) on lees which were stirred occasionally for three months to add texture & complexity.
