Nose

Pungent citrus, Nashi pear, passionfruit, gooseberry & fresh cut herb notes are enhanced by smokey, biscuity and gently supportive oak

Palate

Energetic with pithy, green apple, thistle & lemon grass flavours, a touch of smoke, & the creamy texture seamlessly melding together to result in a highly appealing wine of great balance & persistence

Growing Conditions

2019 was a cool vintage where picking was approximately three weeks later than the long-term average. A labour intensive season, which despite the challenges of birds & disease, produced some superb wines

Harvest

100% Sauvignon Blanc picked off blocks 6 & 8 in four passes on our Karridale vineyard, which is sustainably farmed following organic principles

Bottling

The wine was bottled on 2nd September 2019

Winemaking

100% of the fruit was whole-bunch-pressed straight to barrel for wild yeast fermentation. Malolactic fermentation was not used.

Aging

The wine spent six months in French oak (10% new) on lees which were stirred regularly for three months to add texture & complexity

Appearance

Very pale lemon green

Food Pairing

Angel hair pasta with smoked trout, rocket, chilli and lemon
