Nose
Ripe dark-skinned fruit aromas are complemented by hints of dark chocolate and ground spices.
Palate
Juicy and succulent with hints of savoury notes of spice, black pepper, and liquorice strap wrapped up in silky smooth tannins.
Growing Conditions
A very wet Winter and start to spring invigorated the soils, whilst a very dry November meant no issues around flowering & fruit set. A little unseasonal rain in December then warm dry conditions. A welcome splash of January rain followed by warm, dry conditions & cool nights until mid-April.
Harvest
Hand-picked off a single block (block 22) on 12th April 2018 at a Baumé of 12.6 Be°
Winemaking
Hand-plunged in 1 tonne open fermenters and
open top barrels. 10% of the crop was whole-bunch fermented.10 days on skins. MLF took place in barrel.
Aging
8 months in neutral hogsheads and puncheons
