Growing Conditions
2019 was a cool vintage where picking was approximately three weeks later than the long-term average. A labour-intensive season, which despite the challenges of birds & disease, produced some superb wines
Harvest
The PT15 clone hand-picked from the property on 3rd April 2019 at 13.3° Bé. The Karridale vineyard is sustainably farmed following organic principles
Winemaking
Hand-plunged in one tonne open fermenters & open-top barrels. 10% of the crop was whole-bunch-fermented with the aim of boosting fragrance & spice notes. The ferment remained for ten days on skins.
Aging
Eight months maturation in neutral hogsheads & puncheons which allowed the tannins to soften without introducing overt oak flavours
