Nose

Intense dark cherry with red & blackcurrant aromas, supported by sweet nutty oak

Palate

Medium bodied, fleshy & rounded. The Malbec generosity along with the Cabernet’s structure & persistence, results in a well-weighted wine, framed by fine ripe tannins, discreet oak & balanced acidity, showing significant ageing potential

Growing Conditions

A challenging vintage due to rain. However, the viticulture team was able to deal very effectively with the problem through meticulous canopy management & judicious use of organically approved sprays, meaning quality remained strong

Harvest

The Cabernet Sauvignon was harvested on 30th March 2021 at 13.0° Bé, the Malbec was hand-picked at 12.8° Bé on 26th & 30th March

Bottling

Bottled on 7th November 2022

Winemaking

A blend of 80% Cabernet Sauvignon, 18% Malbec, 2% Petit Verdot. Processed to both open & closed fermenters & cold soaked for two days to aid extraction. The Cabernet was co-fermented with the Petit Verdot, inoculated & then hand-plunged & pumped over two to three times a day. Stayed on skins for between 10 - 13 days. The ferments were co-inoculated with MLF bacteria to help retain freshness, then pressed when dry & racked to barrels. Vegan friendly. Unfined

Aging

17 months maturation in French oak, of which 14% was new

A vibrant deep purple in appearance
