Nose
A lifted nose of white peach and nectarine with notes of lemon thyme and white flowers, supported by a whiff of caramel oak.
Palate
Rich and complex palate of stone fruits and custard apple with a hazelnut praline lift. Fine citrus acidity balanced by creamy textural mouthfeel with brioche notes.
Growing Conditions
A mild growing season associated with moderate crop led to slow and even ripening during harvest 2021, preserving good acidity and balance while intensifying varietal characters across all the white varieties.
Our 2021 Chardonnay is a blend of our three favourite batches that year: a field blend of Burgundian clones we grow in a pocket of the Wilyabrup area with its own cool and dry micro-climate, a Gingin selection from our original Jindong property, and a batch of Gingin fruit from the cool, crisp Karridale area.

Harvest
These three blocks are all cane-pruned, entirely leaf-plucked through the fruit zone and low yielding. They were selected for representing the diversity and complementarity of Margaret River’s micro-climates. The result of the blend showcases richness and restraint, which make Margaret River terroirs truly unique.
The fruit was picked on three separate nights in March 2021 and sent straight to the winery for pressing while still cool.
Winemaking
The fruit arrived at the winery very early morning. After a quick settling in tank, the juices were barrelled down for fermentation at cool temperature in French oak, new to 3 years of age. The wine was left on lees without batonnage, unsulfured for approximately three months then sulfured for a further seven
months before selecting and blending the best barrels for bottling in January 2022.

Enjoy now or cellar for many years.
