Nose

Lifted, fresh but complex. Layered with oak and classical Cabernet perfume.

Palate

Medium bodied, tightly wound with fine layers of oak overlaying dark and ripe Cabernet fruits It is clearly varietal with finely polished, persistent tannins and savoury fruit sweetness to resolve the finish. Those who cellar in the medium to longer term will be rewarded.

Winemaking

We employed small batch winemaking, selecting multiple parcels that would often accommodate a few barrels. The batches were fermented, and cap plunged twice daily. After gentle pressing the wine was transferred to oak barrels for malolactic fermentation and further maturation, after which the best batches were selected and assembled together before bottling.

Appearance

Deep purple red with a dark cherry core.

Food Pairing

Char grilled meats.
