Nose

Attractive lifted fresh perfume from bottle fermented Pinot Noir; quite complex, with a fine nuance of yeast autolysis and lemon pith.

Palate

Fuller bodied, balanced and complex with a terrific surge of flavour at the start. Great balance and fine long lime lemon persistent flavours make the wine linger and beckons another glass. Perfectly balanced dosage in the drier spectrum.

Growing Conditions

Fruit was hand-picked and pressed carefully, selected from vineyards especially suited to grapes destined for this style across several excellent vintages.

Winemaking

All varieties were hand harvested and the fruit cooled overnight, then whole bunch pressed the following morning - a technique that helps retain delicacy and persistence in the final cuvee. After primary fermentation, the wines have been tiraged with the addition of sugar and yeast, bottle fermented and matured. Various parcels of differing ages, up to 12 months on lees, were “transvasaged” to tank, clarified and bottled into new glass. A small quantity of expedition liqueur was added back to bring the now dry wine back into fine balance.

Pale coral pink, with a generous and fine bead.

Fine by itself but especially as an aperitif.
